Crunchy Granola
10 cups gluten free regular oats (not quick oats)
3/4 cup coconut sugar
2/3 cup honey
2/3 cup coconut oil
2/3 cup shredded coconut
2/3 cup raw cashews
2/3 cup raw pecans
2/3 cup raw almonds
1/3 cup cacao nibs
1/3 cup raw sunflower seeds
1/3 cup raw, shelled pumpkin seeds
2 teaspoons cinnamon
2 teaspoons vanilla
2 pinches sea salt
Melt the honey, coconut sugar, and coconut oil in a soup pan. Heat until the sugar has melted. Add in the cinnamon, vanilla and salt, then stir well.
In a large mixing bowl, mix all other ingredients, then add in the sugar mixture. Stir well to make sure all the granola is coated.
Bake for 10 minutes at 375. Stir, and then bake for another 8-10 minutes, depending on your oven. Watch to make sure the granola doesn't burn on the edges.
Let cool, and store in airtight container.
**the nuts can be switched out for whatever nuts you like.
