Dairy Free Sour Cream

Always double this recipe- the blender doesn't work well with only one cup cashews


2 cup raw cashews (soaked overnight)

4 T apple cider vinegar

4 T lemon juice or juice of 1 small lemon

1-2 tbsp water (if needed)

salt to taste


Soak the cashews for 2-4 hours in boiling water.

Drain and rinse, then add to a blender and blend for 1 minute.

Add in the lemon juice and vinegar and keep blending.

Lastly, add in the water and salt. Blend until it's smooth.


This will keep in the fridge for about a week. It can be frozen for up to a couple months.
