Date Caramel

20 fresh medjool dates
1/4-1/2 Â teaspoon vanilla extract
1/4 - 1/2 teaspoon sea salt
1 tablespoons coconut oil
3 tablespoons water from soaking the dates
The key to this recipe is to have a food processor. that has a heavy base, and the motor is strong enough to handle the stickiness of the dates. This is the one I like.
If dates are soft and sticky, there is no need to soak them. Â If they are a bit dry, soak them in warm water for 10 minutes. Drain, but reserve some of the liquid. Remove the pits.
Add all ingredients into a food processor and process until the caramel is soft and smooth. This takes about 5 minutes.
*This caramel can be scooped into balls, and frozen, then dipped in Three-Ingredient Chocolate. Store in fridge.
