No Bake Chewy Granola Bars

1/2 cup coconut sugar

3/4 cup brown rice syrup

3/4 cup honey

1/3 cup coconut oil

2 teaspoons vanilla extract

5 cups regular gluten-free oats (not quick oats)

2/3 cup cacao powder

1/3 cup homemade chocolate chips optional

1/3 cup raw almonds

1/3 cup raw pecans

1/3 cup raw cashew nuts

1/3 cup raw sunflower seeds

1/4 cup raw shelled pumpkin seeds

1/3 cup shredded coconut


Grind the nuts in a food processor until they are the size you like.  

In a large bowl, stir nuts in with oats. 

In a pan, add coconut sugar, honey, brown rice syrup, coconut oil, peanut butter, and sea salt. Melt until the sugars are dissolved. Mix well. Stir in vanilla. Mix well. 

Pour this mixture over the oats. Stir well and then put mixture into cookie sheet or jelly roll pan. Spread the mixture out, and then place a piece of wax paper over the top of the mixture, and press firmly into the pan.

Let cool, then slice. Store in a container, with wax paper separating the layers. Storing in the fridge in the summer is best, as the oil melts.
