Puffed Rice Treats

1 1/2 boxes of one degree organic foods sprouted brown rice crisps (about 9 cups)
1 cup filtered water (split into half cups)
1 cup organic honey
3 tablepoons grass-fed gelatin
3 tablespoons coconut oil, plus more to oil pan
2 tsp vanilla extract
1/4 tsp sea salt
In your mixer bowl, add the gelatin with 1/2 cup of water.
While the gelatin is softening, pour the other 1/2 cup of water in a sauce pan along with the honey, vanilla, and the salt.
Turn the burner to a medium high heat, bringing the mixture to a boil. Use a large soup pan so the mixture doesn't boil over
Place a candy thermometer in the sauce pan and continue to boil the mixture until it reaches 240 degrees (the soft ball stage) This will take approx. 7-8 min.
Add 3 tablespoons coconut oil to mixer, then turn your standing mixer to low/med.
Slowly pour the honey mixture into the bowl combining it with the softened gelatin.
Turn the mixer to high and continue beating the mixture until it becomes thick like marshmallow creme (about 10 min).
While the mixture is whipping, grease 9x13 pan with coconut oil. Pour rice krispies into large mixing bowl.
Pour marshmallow mixture over rice krispies and stir to combine.
Press into 9x13 pan and let cool. Cut and enjoy!
